As we’ve been putting away our jackets and admiring the blooming trees the maple syrup makers have been wailing about this bizarrely early spring. Maple trees need cold winter nights and warm, sunny days for sap to flow. Several within the syrup industry have been saying that this is the worst time of the year ever.

Therefore, when I saw a plethora of Noble Tonic 01: Tuthilltown Bourbon Barrel Matured Maple Syrup in the store in The Brooklyn Kitchen and I bought an entire bottle, and the nearly-$149 cost was a joke.

The syrup is harvested in Quebec and matured in oak barrels charred to the addition of a small amount of whiskey in the raw at the Tuthilltown distillery located in Gardiner (New York’s very first whiskey distillery after Prohibition).

On the surface, it’s pure maple, smooth and creamy, but after that, it’s blended with subtle bourbon flavors and a mellow smooth end. It’s not too boozy, but it has enough Bourbon taste to give it something. It won’t overwhelm the pancakes and instead gives it sophisticated polish.

I’m disappointed that they have changed the design of their bottles from the square flask that was cool but if I could find a way to make cocktails from the stuff, I’ll be accepted. Get it at The Brooklyn Kitchen while supplies remain.
